Ingredients

  • 2lbs Boneless, Skinless Chicken Breasts
  • 3 tbsp Cilantro, Finely Chopped
  • 1 Minced Garlic Clove
  • 1 Lime Zest
  • 5 tbsp Lime Juice
  • 1/2 cup Extra Virgin Olive Oil
  • 2 tsp Salt
  • 1 tsp Black Pepper
  • 1 cup Sour Cream
  • 1 cup Salsa

Kitchen Tools Required

  • Grill pan or a grill
  • A zip-lock bag for marinating the chicken (a bowl will do too)
  • Spatula or a tong
  • A cutting board and a sharp knife for cutting

Cooking Instructions

  • Cut the chicken into small cubes.
  • Place the cilantro, minced garlic, lime zest, lime juice, olive oil, salt and pepper into a bowl. Stir until mixed well.
  • Place the cubed chicken into the prepared marinade, making sure that all the cubes are well seasoned and covered with the mixture on all sides.
  • Cover and let sit in the refrigerator for 30 to 60 minutes.

Because this is a citrus-based marinade, you want to avoid letting it marinade longer than one hour. After this point, the acids start breaking down the chicken's protein.

Now it's time to prepare your dipping sauce. Simply combine 1 cup of sour cream with one cup of your favorite salsa, and you're done.

If you are a cheesy person, you can stir cheddar/mozzarella cheese into sour cream to thicken it up a bit more and add more flavor to it too. The cheese will definitely give the calorie count a slight spike, but your taste buds are going to love you for this little addition.

Pro Tips

  • Do not forget to spray the grill with cooking spray or your chicken will be a mess.
  • If the chicken starts burning but still not thoroughly done, it’s best to move it to the cooler part of the grill.
  • If you don’t like chicken breasts, you can always use thighs or wings. Recipe stays the same but cooking time will differ.

Do It Differently!

If you are inviting some guests over for tea and want to serve some crazy-delicious chicken, then this is your recipe. But wait, chicken breasts aren't exactly the tea material, right?

You are right: it should be something petite and not-so-dinner-type! Well, with just one minor twist to this recipe, you can make it a perfect tea-time snack that your guest will be drooling over.

What's the tweak? Cut your chicken into cubes and throw it on skewers. Enjoy the same recipe, same sauce in a new appearance. No need to find a new recipe altogether!

Ran Out of Sour Cream?

It's frustrating to run out of an ingredient that you swore you had in the fridge or pantry! But it happens all the time. You lose track of things and discover the missing link in a recipe only when you are all ready to get going with it.

If you thought you had sour cream but actually didn't, then we are here for the rescue! Don't just run to the store yet; we can tell you about a perfect swap!

Use GREEK YOGURT instead. That's the best substitute for sour cream. You will love the taste if you are a yogurt person in general.

Spice It Up!

Not everyone takes a minimalist route to BBQ chicken. Some might want to make it spicy. If you don't like your chicken simple with just salt and pepper, you can use fenugreek seeds, turmeric, and red chili peppers in the marinade to give a spice slant to the recipe. These spices are best to add a rich, deep and innate spicy feel to grill chicken.

Common Questions

1. Is it a good choice for meal prep?

Grilled chicken is just the thing for meal prep. You can make it over the weekend and leave it in your fridge for later when you are too busy to cook something fresh. It warms up perfectly and tastes great too.

2. Can this chicken marinade be made ahead of time?

Yes, sure! Prepare the marinade and store it in an airtight jar in the fridge. You can leave the marinade in the fridge upto three days ahead. In fact, you can even freeze the marinade for instant use. When needed, thaw it and put the chicken breasts in it.

3. Is marinating necessary?

Yes, it’s very important to marinate the chicken. It lets the taste go deep into the chicken and makes it way more delicious than it would be without marination. It’s not necessary to give it hours of marination, you can marinate your chicken for as little as 20 minutes even.

4. Is it good for those on restrictive diets?

Absolutely yes! It’s a wonderful choice for those trying to shed extra pounds. It’s low calorie and high protein, all the reasons for choosing it as a healthy alternative to high calorie, fattening foods.
