  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/4 cup cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsweetened almond milk
  • 1/3 cup vegetable oil
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon vanilla extract

Instructions

  • Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  • In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking soda, and salt until well combined.
  • Add the almond milk, vegetable oil, apple cider vinegar, and vanilla extract to the dry ingredients. Mix until the batter is smooth and well incorporated.
  • Divide the batter evenly among the cupcake liners, filling each one about two-thirds full.
  • Place the muffin tin in the preheated oven and bake for approximately 18 to 20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.
  • Once the cupcakes are baked, remove them from the oven and let them cool in the tin for a few minutes. Then transfer them to a wire rack to cool completely.
  • Once the cupcakes are completely cooled, you can frost them with your favorite vegan frosting or enjoy them plain.
