  • 1.5 cups diced yellow onion 
  • 4 cups no-salt-added chicken broth 
  • 2 cups reserved gravy 
  • 4 cups previously roasted vegetables, chopped into bite-sized portions 
  • 3 cups shredded cooked turkey 
  • 2 tbsp. freshly chopped flat-leaf parsley 
  • 1/4 tsp. sea salt 
  • 1/4 tsp. freshly ground black pepper

Instructions

  • In a large, heavy pot, warm oil over medium-high heat. 
  • Sauté onion until softened and slightly browned, about 6 minutes. 
  • Combine broth and gravy, bringing to a boil while stirring.

  • Mix in parsley, salt, and pepper.
